Perhaps because I'm old enough to remember when your most conventional options were either mailing a request for tickets to the airline, calling them, or going to a travel agency, some online reservation experiences are mind-blowingly wonderful to me.
I'm particularly fond of JetBlue's system. While the big airlines do have similar seat selection interfaces, JetBlue compliments it with its very memorable and attractive branding. I usually use Southwest or Delta which have very different systems (predictably, Delta's is a little more complex) but I would use JetBlue all the time if they covered as much airspace as I would like
For the sake of explanation, here a few screenshots of the booking process on their site:
A very attractive (it's hard to go wrong with blue, orange, and white) and easy to navigate site (six buttons along the top that list things most users will be looking for) with a pinch of wit ('Hi.' 'Buy').
A clear list of flight options that immediately update along the right side itinerary panel. Most importantly, it's really easy to change dates on one leg of the flight without losing your data on the other.
This one is my favorite, the seat option chart. Seats are categorized differently and they let you know which section you're choosing from when you click on an open seat. Your itinerary is still on your right side to remind you as you continue to book. (Not pictured: A final pre-payment step where you can select a rental car and hotel for your trip- also helpful and easily navigable)
